In a modern oven the temperature is measured by a small resistance probe, usually a thin metal rod projecting into the top left of the cavity, whose electrical resistance changes with heat. The control reads that resistance and decides when to fire the element or the burner. As a sensor drifts out of specification, the control does exactly what it is told and holds the wrong temperature perfectly steadily. That is why the symptom is consistent rather than erratic, and it is also why nothing you change in the kitchen makes any difference.

The test is cheap and you can do it before calling anyone. Put an oven thermometer in the middle of the cavity, set the oven to 350 degrees Fahrenheit, and leave it for a good twenty minutes after the preheat signal so it has cycled a few times. Read it. A modest offset of ten or fifteen degrees can usually be corrected in the oven own calibration setting, which most machines have in the control menu, and that costs nothing at all. The Self-Clean Cycle, and Why We Are Cautious About It

A pyrolytic self-clean cycle works by taking the cavity up to somewhere around 900 degrees Fahrenheit and holding it there long enough to reduce food residue to ash. It does clean the oven. It is also, by a wide margin, the most thermally punishing thing the appliance ever does to itself, and the failures that follow it are predictable.

The oven locks the door and runs far above cooking temperature for hours, and the heat soaks outward into places that were designed for cooking temperatures rather than cleaning temperatures. The parts that fail are the thermal fuse, which is a one-time device that opens and takes the whole oven dead with it; the control board and the display, which sit above the cavity in most designs and cook slowly all cycle; the door latch mechanism, which can jam and leave the door locked shut; and the door hinges and gasket.
