The Number on the Dial Is Not the Temperature Inside

An oven does not hold a steady temperature and was never designed to. It heats until a sensor tells the control it has passed the set point, switches the element or burner off, coasts down until the sensor says it has fallen below, and heats again. That cycling is normal, it happens throughout the bake, and inside a typical domestic oven the real temperature swings by a noticeable margin either side of what the display says. A thermometer on the middle rack will show you that swing, and it is not a fault.

What is a fault is a persistent offset: an oven that is consistently 25 or 30 degrees below the set point across the whole cycle, or one that has drifted so far that recipes have stopped working. That is the complaint we take more than any other on cooking appliances, and the good news is that it usually sits at the cheap end of oven repair. Two things cause it.

The first is the temperature sensor, a small probe inside the cavity whose resistance changes with heat. The control reads that resistance and decides what to do. When the probe drifts out of specification, the control is doing everything correctly on the basis of bad information, so the oven confidently holds the wrong temperature. Replacing it is one of the least expensive jobs on any oven.

The second is calibration. Almost every oven built in the last twenty years has an adjustment in its settings that shifts the whole scale by a fixed offset, and it can drift, be knocked out during a power event, or simply have been wrong from new. It is not a repair at all: it is a setting, and where that is the answer you should be told so plainly rather than sold a part.

There is a third possibility, which is that the oven is fine and something else is wrong, and that is the last section on this page. How to Test Your Oven Properly

A single reading tells you almost nothing, because an oven is always in the middle of a cycle. Here is the method that produces a number worth acting on, and it needs an oven thermometer that costs very little.

Put the thermometer on the middle rack, in the centre, not touching anything. Set the oven to 350 F and leave it completely alone with the door shut. Wait until it signals it has preheated, then wait a further twenty minutes so it has settled into its cycling rhythm rather than still climbing. Now read it every five minutes for another twenty, without opening the door, and write down what you see. You will get a set of numbers that rise and fall.

Average them. If the average is within about 15 degrees of 350, your oven is doing what a domestic oven does and the swing you are seeing is normal cycling rather than a fault. If the average sits 25 or 30 degrees or more away from the set point, and stays there, that is the persistent offset described above, and it is worth fixing.

Two further readings help us and cost nothing. Repeat the exercise at 425 F, because some faults show up more at one end of the range than the other, and an oven accurate at 350 but 40 degrees out at 425 tells us something different from one that is uniformly low. And note how long the preheat took: an oven taking noticeably longer than it used to is often a weakening element even before it fails outright.

Bring those numbers to the call. A technician arriving with an averaged reading at two temperatures and a preheat time has most of the diagnosis already, which shortens the visit and occasionally removes the need for one, because on many machines the fix is a calibration offset in the settings menu that you can apply yourself once you know how far out it is.

Baking Problems That Are Not the Oven

Before booking anything, it is worth ruling out four things that produce complaints identical to a faulty oven and are not faults at all.

Rack position. The middle rack is the reference position and almost every recipe assumes it. Baking on the top rack puts food closer to the broil element, which browns the top before the middle is done. The bottom rack puts it nearer the bake element, which is why the underside catches. If the same recipe worked last year and fails now, check where the rack is sitting before you check anything else.

Tin colour and material. A dark or non-stick tin absorbs radiant heat far more readily than a shiny aluminium one, so the same batch at the same temperature browns faster and harder in a dark tin. Glass behaves differently again, holding heat longer. This is the single most common reason a recipe that has always worked suddenly produces a dark base, and it usually follows somebody buying new bakeware.

Opening the door. Every time the door opens, a large share of the hot air leaves in seconds and the oven spends the next several minutes recovering. Three checks during a bake can add ten or fifteen minutes to a cook and produce exactly the uneven result people blame on the appliance. Use the light.

Hot spots. Every oven has them, including new ones. In a conventional oven heat rises unevenly around whatever is inside, so the back is usually hotter than the front and one side is often warmer than the other. The fix is not a repair, it is rotating the tray halfway through, which is why so many recipes tell you to do it. If you want to map yours, cover a rack with slices of white bread and toast them for a few minutes: the pattern that comes out is your oven’s heat map, and it is a genuinely useful thing to know.
