Three things happen while you are gone. The water standing in the fill valve and the last stretch of tube sits still for months in a warm space behind the appliance, which is the condition under which deposit forms and the passage narrows. The ice already in the bin slowly sublimates and refreezes, so what you find on your return is not cubes but a single fused block, and dropping that onto a working auger is how dispenser motors get damaged. And the supply line stays under mains pressure the whole time you are away, with nobody in the apartment to notice if anything lets go.
The shut-down routine is short. Switch the ice maker off at the bail arm or the control so it stops cycling. Empty the bin completely, because ice you leave will not be ice when you get back. Then close the water shut-off valve serving the refrigerator line, which removes the pressure from the hose for the whole time the home is unoccupied. That last step is the one that matters most in an apartment above another apartment, and it takes about five seconds once you know where the valve is.

Older installations often use a saddle valve, the type clamped onto an existing pipe with a piercing pin. They were common, they are convenient, and they are the fitting we most often find weeping. Where we meet one on a repair we will say so, because replacing it with a proper quarter-turn shut-off is a small job that removes a recurring risk, and it also gives you a valve that actually closes when you need it to.
