Two Different Appliances, and People Confuse Them

Almost every disappointing conversation about ice starts with the two being treated as the same thing, so it is worth separating them properly.

A refrigerator ice maker is a small mould inside a freezer that already exists for another purpose. It fills for a fixed number of seconds, freezes a batch slowly using cold the freezer is producing anyway, and harvests it into a bin. It is designed for a household’s daily use, not for entertaining, and its production is measured in a modest number of pounds a day. It is also cheap to repair.

A standalone ice machine is refrigeration in its own right. It has its own compressor, its own condenser and usually its own drain, and it makes ice on a plate or in a mould deliberately and fast. And the conductive film bridges the aluminium to the copper, making a galvanic cell in which the aluminium is the anode and loses.

The effect arrives long before the coil looks ruined. Fins that have lost their bond with the tube no longer carry heat out of it, so the machine’s effective condenser area shrinks. An ice machine with a weakened condenser makes ice more slowly, runs far longer for each batch, and on a hot afternoon may not complete a cycle at all. Clear ice is made a different way. The machine flows water continuously over a chilled plate so that it freezes in thin layers from one side, and anything dissolved is carried away by the moving water instead of being trapped. What is left is dense, slow-melting, transparent ice. That is why the machines that make it are more complicated: they have a water pump, a reservoir and a harvest cycle, none of which a fridge ice maker has.

Two practical consequences follow.

A fridge ice maker will never make clear ice, and no repair, filter or setting will change that. If clarity is what you are after, it is a different appliance rather than a fix.
