Extraction: the Appliance Nobody Maintains
Every kitchen has a hood or an over-range microwave with a fan in it, and almost nobody services either until something else appears to break. In a household that cooks at high heat — searing, frying, wok work, anything that produces visible vapour — the extractor is the hardest-working appliance in the room and the least looked after.
Here is what actually happens, in sequence, and why the complaint usually names the wrong machine.
- Grease loads the filters. Mesh or baffle filters are designed to be removed and washed. Left alone they clog with cooled grease, airflow drops, and the hood stops clearing the air even at full speed. The complaint arrives as “the extractor has stopped working” when the motor is fine
- Grease then passes the filters and coats the impeller, the housing and the duct. An impeller carrying a film of grease is out of balance and noisy, and eventually the motor bearings suffer. That is a real repair caused by a maintenance omission
- Heat and steam go into the room instead. Which is where the knock-on damage starts: moisture into cabinets and plaster, grease film on the wall units, and — this is the one people miss — heat and vapour reaching the refrigerator standing next to the range. A fridge working in a hot, humid kitchen runs longer and harder
- Over-range microwaves get it worst. The vent path runs through the microwave itself, so grease reaches its charcoal or grease filters, its fan, and eventually its electronics. What to do, and none of this needs us:
- Wash the filters properly and often. Most are dishwasher-safe; hot water and degreaser by hand works too. Monthly is reasonable for heavy cooking, and there is no reason to leave it longer than three
- Replace charcoal filters on a recirculating hood on schedule. They do not wash — they are consumables, and when saturated they do nothing
- Wipe the impeller and housing when you have the filters out. It takes ten minutes and it is what keeps the motor honest
- Run the fan for a few minutes after cooking, not just during. Most of the steam leaves the pan after the heat goes off

Vented or Recirculating? It Changes Everything
This is worth checking in any home and it is worth checking in every apartment, because a great many people believe their hood vents outside when it does not.
A ducted hood pushes air out of the building. It removes grease, steam, heat and smells. A recirculating hood draws air through a grease filter and a charcoal filter and blows it back into the room. It removes some grease and some odour. It removes no steam and no heat at all.
In apartments, and in houses where a kitchen was remodelled without a route to an outside wall, recirculating is common — and the practical consequences are real:
- The kitchen stays humid after cooking, and that moisture has to go somewhere. In a small apartment it goes into the fabric of the room
- The charcoal filter is a consumable that people almost never change, at which point the hood is doing nothing but making noise
- Heat stays in the room, which is exactly what makes a refrigerator next to a range work harder than it should
How to tell which you have: look above the hood. A duct rising into the cabinet or the wall means ducted. A blank cabinet with vents in the front or top of the hood usually means recirculating. If you are renting and it is recirculating, keeping the charcoal filters fresh is the one thing in your control, and opening a window while you cook does more than turning the fan up.

In the apartments, the practical issues are access and appliance size. Building sign-in, service-elevator booking, permitted working hours and a water shut-off that may not be inside your unit all decide whether a visit completes — tell us at booking. In the pre-1960 houses, the constraint is that the kitchen was designed around the appliances of its day. Cabinet depths and door swings have changed more than widths, dedicated appliance circuits are often fewer than a modern kitchen expects, and dishwashers and laundry were frequently added later into whatever space existed. The Free Checks Worth Doing First
- Hood not clearing the air: take the filters out and hold them up to the light. If you cannot see through them, wash them — that is usually the whole fault
- Hood noisy: with the power off, look at the impeller. A film of grease unbalances it, and cleaning it is free
- Kitchen still steamy with the fan on: check whether the hood is ducted or recirculating. A recirculating hood removes no steam at all, whatever speed it runs at
- Refrigerator struggling in a kitchen that gets hot: vacuum the condenser coils, give it clearance, and improve extraction — a refrigerator that is not cooling walks the sequence
- Over-range microwave weak or noisy: check and clean its grease filters underneath, and replace the charcoal filter if it recirculates
- Dishwasher not draining: filter first, then check the sink drains fast, then whether the drain line has a high loop
